Recently I've been writing an assignment which is basically to review a cookbook. After going through many, many choices which are still scattered around my bedroom I decided on The Whole Beast by Fergus Henderson. I love this book, and I love the way of eating that it promotes. I've never been a huge fan of organ meats, but I'll be very interested to see how this turns out. Have you considered just buying a whole animal yourself? It might be the easiest way to get all the bits. Might be easier if you had a partner in crime though.

That's a great idea, and I actually talked about doing something like that with some culinary school friends. But it never materialized.

Next time I'm in in Nova Scotia we can absolutely cook a pig's head. I've got a great family recipe for Head Cheese, but I'd like to try Thomas Keller's recipe for braised pigs head as well.
